When the weather cools down—or honestly, when life gets busy—there’s nothing more comforting than a slow cooker meal waiting for you at the end of the day. This Gluten-Free Slow Cooker Pot Roast is a recipe I come back to again and again. It’s savory, simple, and safe for our Celiac family.
Why I Love This Recipe
I’ve always loved the smell of pot roast simmering in the slow cooker. It reminds me of cozy Sunday dinners and the kind of meals that feed a crowd with love. This one is especially easy—you can throw it together in the morning before work or church, and come home to a tender roast, flavorful veggies, and rich, beefy gravy.
Celiac-Safe & Comforting
Many pot roast recipes use pre-made seasoning packets that aren’t always gluten-free. I make mine with:
A certified gluten-free brown gravy mix
A gluten-free ranch dressing mix
And sometimes a splash of the juice from pepperoncini peppers for a bit of tang
We skip the hidden gluten without sacrificing any flavor.
Butter? Optional!
Traditionally, Mississippi-style pot roast includes a whole stick of butter. I’ve made it both ways, and it’s delicious either way. Leaving the butter out makes it a little lighter, but still totally satisfying.
What to Serve With It
I like to add carrots and potatoes right to the slow cooker—one less thing to prep. But this roast is also wonderful over gluten-free egg noodles or creamy mashed potatoes (made with extra carrots or even added celery).

Carrot Tips
To save time, you can use baby carrots. If you like more carrots, you can skip the potatoes in the slow cooker to add more carrots and then serve over mashed potatoes (homemade or the store pre-made mashed potatoes like Bob Evans).

Onions
You don't have to dice the onions very small. They add big flavor.

GF Gravy and Ranch Packets
For Gravy, both Pioneer brand or McCormick make great GF Brown Gravy. For Ranch, Hidden Valley is a great option.

Celery
Sometimes I like to add celery for a roast vegetable especially when I omit the potatoes to serve over mashed potatoes.

Add the chuck roast to the slow cooker. Season with salt, pepper, and garlic powder.

Add peeled quartered potatoes, peeled quartered carrots, pepperoncini peppers, a splash of the pepper juice, and diced onions to slow cooker nestled around the roast.

Add GF ranch packet and GF gravy packet to a large mixing cup and whisk in the beef broth.Add mixture to slow cooker. Add as much beef broth as needed to nestle roast and vegetables.

Cover the slow cooker and cook on low heat for 8 to 10 hours. The meat should be fork-tender and falling apart when done.

If desired, thicken the gravy in the last hour of cooking by stirring in a slurry (by mixing a tablespoon or two of cornstarch with GF broth or water).

Optionally shred the beef using two forks. The drippings in the pot will form a rich, natural gravy due to the seasoning packets and GF broth. Serve the shredded beef and vegetables with the gravy.

1 (3-4 lb) beef chuck roast
1 packet GF brown gravy mix
1 packet GF ranch dressing mix
1/2 to 1 jar of pepperoncini peppers
optional splash of juice for flavor
5 peeled potatoes cut in quarters
1 lb. carrots cut in 1/3s or 1/4s
salt and pepper
1 diced onion
32-64 oz. GF Beef Broth
1 tablespoon garlic powder
