This Gluten-Free Slow Cooker Queso is a game day favorite and a total crowd-pleaser at our Notre Dame tailgates. The kids, and their friends, always request it, and until now, I’d never actually written the recipe down! It’s creamy, cheesy, and absolutely irresistible. Serve it hot with tortilla chips and watch it vanish.



Gluten-Free Slow Cooker Queso for Tailgating

Creamy, cheesy, and always the first to disappear at a Notre Dame tailgate.

There’s always that one dish that vanishes before the game even starts—and for us, this queso is it. I’ve been bringing it to our Notre Dame tailgates for years, and I’m not exaggerating when I say that the kids (and their friends) always ask for the recipe. Until now, I’d never actually written it down—but I’m finally sharing it here!

This queso is warm, rich, and ridiculously easy to make. It feeds a crowd and can be made gluten-free with just a couple of simple ingredient choices.

Tips & Tailgate Tricks

  • Tailgate tip: Transport the ingredients in a slow cooker to plug in at your tailgate for easy serving.

  • Feed a crowd: This recipe makes about 32 servings—perfect for team gatherings or big parties.

  • Spice it up: Add jalapeños or a dash of hot sauce if you like more heat.

  • Add protein: Cooked GF sausage or seasoned ground beef turns it into a heartier dip.

Gluten-Free Notes

Always check your labels! Velveeta is gluten-free, and most canned diced tomatoes with chilies are as well, but it's important to verify especially when cooking for anyone with Celiac disease.

This queso is part of our tailgating tradition, served alongside my pasta salad, GF chocolate chip cookies, and a lineup of snacks and drinks. It’s easy, stress-free, and sure to earn you hero status with the crowd. I’m so glad I finally wrote it down—and I hope your family loves it as much as ours.

At Home

At home, I use my electric fondue pot instead of a slow cooker and reduce the recipe by half. It comes together quickly and melts much faster.

Can I make more?

If you Slow Cooker is large enough, you can make more. Just remember to use 3 cans of Red Gold petite diced tomatoes with green chilies for every 32 oz. of Velveeta cheese.

Add a Slow Cooker liner to your large Slow Cooker for easy clean up.

Cut Velveeta into small cubes and add to slow cooker. Add petite diced tomatoes with green chilies. Stir well.

Cover and cook on high for 2-4 hours. Be sure to stir, but don't take lid off too much or it will take longer for cheese to melt. Reduce heat to low or keep warm as soon as cheese is fully melted. Serve with GF tortilla chips.
