Roast beef always feels a little special, doesn’t it? In the Gallagher house, it was the centerpiece of many cozy Sunday dinners. This top sirloin roast recipe is simple, classic, and naturally gluten-free—no flour, no gravy mixes, just real food done right.

Top sirloin is leaner than other roasts, but when cooked properly, it’s juicy, flavorful, and perfect for slicing. I love it served with my gluten-free mashed potatoes and a rich pan gravy (optional, but highly encouraged).

  • Great for a crowd: A 5–6 lb roast can serve 12–16 people.

  • Budget-friendly: Top sirloin is often more affordable than ribeye or tenderloin.

Ingredients You'll Need

  • Top sirloin roast (5–6 lbs) – Choose one with a nice fat cap for moisture and flavor.

  • Garlic cloves (15!) – I tuck slivers all over for that classic flavor.

  • Salt, cracked pepper, thyme, oregano – A simple, flavorful rub that enhances the meat.

Cooking Tips

  • Bring roast to room temperature: Let it sit out for about 1 hour before roasting.

  • Use a thermometer: This is key for perfectly cooked beef!

    • Medium-rare: 135°F

    • Medium: 145°F

  • Let it rest: After cooking, tent loosely with foil and rest for 15–20 minutes before slicing.

Optional Gravy

I always make a gluten-free pan gravy using the drippings, a little beef broth, and cornstarch. Just whisk 1–2 tablespoons of cornstarch with cold broth or water, then stir into hot drippings and simmer until thick. Season to taste with salt and pepper.

Serving Suggestions

This roast is perfect with:

  • Simple peas (I just use a bag of frozen peas)

Using a paring knife, spear into roast 1.5 - 2 inches deep. Press garlic clove into each slot.

Sprinkle seasonings all over roast.

Place in roasting pan on rack, fat side up. Use butcher twine to tie for cooking. Insert meat them

Cook at 450 degrees F for 15 minutes; the reduce heat to 325 degrees F and cook for about 3 hours.

Remove from oven when internal temperature reaches 135 degrees F.

Cover with foil. Rest 15 minutes. Then, transfer roast to cutting board.

Place roasting pan with juices on the stove top on medium. Whisk cornstarch with beef broth, then add to pan to make gravy. Bring to a boil then reduce heat to a simmer until thickened.

Use carving knife to slice the roast. Serve with gravy.
