Shepherd’s Pie is one of those timeless comfort meals that never goes out of style. It’s cozy, hearty, and filling—but this version is perfect for busy weeknights when time is short and your people are hungry. Best of all? It’s completely gluten-free and baked in individual ramekins, which makes serving (and storing leftovers!) so easy.
A Shortcut Classic
Traditional Shepherd’s Pie can be a labor of love, but this weeknight version keeps things simple:
I use 92% lean ground beef for a lighter, protein-rich base.
A packet of gluten-free brown gravy mix (I like McCormick or Pioneer) adds flavor without fuss.
A bag of frozen peas, carrots, and corn saves time and adds that classic veggie blend.
And for the topping? I use Bob Evans Sour Cream Mashed Potatoes—they're naturally gluten-free and the perfect creamy shortcut when you don’t want to boil potatoes on a weeknight. (Or leftover homemade creamy mashed potatoes).
Why Ramekins?
Individual ramekins make this dish extra special. Everyone gets their own little pie—crispy edges, creamy tops, and all! They’re also great for portion control and super easy to pop into lunch containers the next day. Just scoop the meat and veggie filling into the ramekins, top with mashed potatoes, and bake until bubbly and golden.

Mashed Potatoes
Top with either leftover mashed potatoes or Bob Evans Family Size Sour Cream mashed potatoes.
Notes

Preheat oven to 350 degrees F.
Brown lean ground beef with diced onions in pan on medium high heat.

Add package of GF brown gravy and 1 cup water. Stir well.

Add peas, carrots, and corn. Stir and simmer 5-10 minutes until liquid is absorbed.

Warm Bob Evans sour cream mashed potatoes in microwave according to first 2/3rds of directions.

Add meat and veggie mixture to individual ramekins. Top with Bob Evans sour cream mashed potatoes.

Optionally top with shredded cheese.
Bake, on cookie sheet, for 30 minut4es at 350 degrees F.
