Gluten-Free Mexican Stir-Fry

Quick gluten-free Mexican stir fry with chicken, bell peppers, beans, and bold flavor. Ready in 30 minutes—perfect for busy nights.


Gluten-Free Mexican Stir Fry

Gluten-Free Mexican Stir Fry has long been a Gallagher Family favorite. Adapted from Grandma Helen. I often double the recipe and divide the leftovers into single-serving containers. You'll only need two pans: one for the stir-fry and one to prepare the rice. For doubling the recipe, I use a large, 7-quart Calphalon sauteuse pan, but an 5-quart non-stick chef pan will work fine for the default recipe (4 servings).

Costco is the best place to buy rotisserie chicken, but you can get it at any grocery store. Be sure to make sure it's gluten-free. Not all varieties or preparations are gluten-free for rotisserie chicken. I like to use just the white meat. You can shred it if you prefer, but I like to cut into bite size pieces. Alternatively, you can poach chicken breasts (with bone or boneless). After poaching, de-bone, then shred or cut into bite size pieces.

Sauteuse Pan

You'll need a non-stick sauteuse pan with a lid. For doubling the recipe, I use a large, 7-quart Calphalon sauteuse pan, but an 5-quart non-stick chef pan will work fine for the default recipe (4 servings).

Bell Peppers

The recipe calls for 2 bell peppers. Use whatever colors you like. Green are the least expensive. I like to use red, yellow or orange in this dish.

Poached Chicken

Instead of a Costco rotisserie chicken, you can poach boneless or bone-in breasts if you prefer, then debone and cut up.

Rice & Shredded Cheese

Serve over rice and top with shredded cheese (not included in nutritional information).

In skillet, heat oil. Add onion and saute for 3 to 5 minutes. Add garlic powder.

Add chopped bell peppers for a couple additional minutes.

Stir in tomato paste, chicken broth, kidney beans, chili powder, and red cayenne pepper. Bring to a boil.

Reduce heat to medium to low to simmer 5 -10 more minutes.

Add chicken. Simmer 5-10 more minutes. Serve over rice and top with shredded cheese.

2 tablespoons EVOO (Extra Virgin Olive Oil)

2 tablespoons garlic powder

6 oz tomato paste

1 Costco rotisserie chicken white meat deboned and cut into small pieces

1 medium diced onion

2 diced bell peppers

2 cans GF chicken broth

1 teaspoon to 1 tablespoon chili powder (to taste)

1 can kidney beans

2 cups long grain white rice prepared as directed

1 teaspoon+ red cayenne pepper to taste

shredded cheese as desired
