I first learned this recipe years ago at a cooking class at the Corner Gourmet in Indianapolis and have since adapted it to be celiac-safe and family-friendly. This Gluten-Free Pasta with Tomatoes & Vodka Sauce is a warm, comforting dish that somehow manages to feel both a little fancy and incredibly simple. I first learned how to make this dish at a cooking class at the Corner Gourmet in Indianapolis years ago, and since then, I’ve adapted it for my gluten-free family. It’s become one of our favorite meals—creamy, rich, and full of flavor with just the right kick of heat.

Recipe Gluten-Free Pasta With Tomatoes & Vodka Sauce

GF Pasta Water

Adding 1/2 cup to 1 cup reserved starchy water from preparing the pasta helps the sauce adhere to the pasta.

More Cheese

I love to sprinkle a little extra parmesan on top when serving or at table.

Melt butter in a large sauteuse pan over medium high heat. Saute onions until wilted.

Add in garlic and seasonings. Saute a couple more minutes until fragrant.

Add tomatoes, juices, proscuitto, and simmer 10 minutes.

Add Vodka. Continue to simmer 5-10 more minutes.

Add heavy cream and 1/2 parmesan. Stir as you simmer and let sauce thicken and ensure cheese melts (do not boil). Continue until all parmesan is added and melted.

Reduce heat to low. Optionally add 1/2 to 1 cup of research starchy water from preparing the pasta. Add prepared, drained GF pasta to the sauce stir well, then serve immediately.

Instructions

4 tablespoons butter

1 large diced onion

1 teaspoon red pepper flakes

8 garlic cloves minced

2 tablespoons dried oregano

2 28 oz. cans crushed San Marzano tomatoes

3- 6 oz. proscuitto

1 cup Vodka

1 cup heavy cream

12 oz. quality grated Parmesan Cheese

Vodka Sauce

24 oz. GF Barilla linguine or fettucini prepared
