When the weather cools down, or when the day is long and dinner needs to come together fast, this One Pot Chicken Enchilada Soup is one of my absolute favorite go-tos. It’s warm, a little spicy, packed with protein, and totally satisfying. Even better? It makes plenty for leftovers.

Heat EVOO in large 7-9 quart pot. Saute onions and jalepeno a few minutes. Add garlic and saute a couple more minutes.

Stir in cornstarch.

Add chicken broth and stir well bringing up the heat.

Add enchilada sauce, black beans, diced tomatoes, diced chilies, bell peppers, chicken, corn, cilantro, cumin, chilii powder, cayenne pepper, salt, and pepper. Stir well.

Bring to simmer. Simmer 15 minutes.

Serve in bowls.
Add your favorite toppings.

1 tablespoon EVOO

1 Costco rotisserien chicken white meat only

2 X 14.5 ounce petite diced tomatoes with green chilies

Fresh Cilantro

6-8 garlic cloves finely minced

40 oz. red enchilada sauce

8 oz. diced green chilies

1 diced jalepeno pepper

1 diced red bell pepper

1 diced green bell pepper

2 15 oz. cans black beans

1 10-12 oz. package frozen corn

salt & pepper

1/4 cup cornstarch

32 oz. chicken broth

1 tablespoon cumin

1 tablespoon chili pepper

1 teaspoon red cayenne pepper

1 large diced onion
