Gluten-Free Slow Cooker Chicken & Noodles With Peas & Carrots

This cozy bowl of chicken and noodles is one of those meals that feels like a warm hug. It’s hearty, filling, and full of familiar flavors—but made entirely gluten-free. With tender shredded chicken, sweet peas and carrots, and a creamy broth, it’s a dish that brings comfort to the table any night of the week.

A Celiac-Safe Classic

Classic chicken and noodles recipes often rely on condensed soups and noodles that contain gluten. But with a few easy swaps, this version is 100% Celiac-safe—without sacrificing taste. I use Campbell’s Gluten-Free Cream of Chicken and Cream of Mushroom soups, and a certified gluten-free chicken broth for the rich, creamy base.

For the veggies, I toss in a bag of frozen peas and carrots—no chopping required! And instead of using a stick of butter, I skip it entirely in this version for a lower-fat but still creamy and flavorful option (however, nutrtion DOES include using the stick of butter for more decadence).

Which Gluten-Free Noodles to Use

There are some fantastic GF noodle options out there now. For this dish, I recommend:

  • Taste Republic Gluten-Free Egg Noodles – my personal favorite for texture

  • Jovial GF Tagliatelle or Fettuccine – another great option with a classic feel

  • Barilla Gluten-Free Fettuccini – for a simple, accessible substitute

Cook the noodles separately and add them just before serving to keep the texture perfect (not included in nutrition information).

Place chicken breasts in the bottom of the slow cooker. Top with a stick of butter.

Mix GF Cream of Mushroom and Cream of Chicken soups with Chicken Broth, then add to slow cooker.

Cook on low heat for 6-7 hours.

Take the chicken out and shred and add back to slow cooker.

Add peas and carrots. Cook 1- 2 more hours on low heat.
