This cozy chowder is one of my favorite slow cooker meals—especially when we’re craving something hearty, creamy, and packed with flavor. Inspired by Mexican street corn, this recipe adds a little twist to classic chicken chowder. It’s naturally gluten-free, full of protein, and makes a generous batch perfect for dinner and leftovers.
