This gluten-free Slow Cooker Street Corn Chicken Chowder is creamy, hearty, and packed with flavor—plus it’s high in protein! With tender chicken, sweet corn, and a touch of spice, it’s an easy set-it-and-forget-it meal that tastes like summer in a bowl.

This cozy chowder is one of my favorite slow cooker meals—especially when we’re craving something hearty, creamy, and packed with flavor. Inspired by Mexican street corn, this recipe adds a little twist to classic chicken chowder. It’s naturally gluten-free, full of protein, and makes a generous batch perfect for dinner and leftovers.

Toss the ingredients in the slow cooker, let it do its thing, then stir in the cream cheese at the end for that dreamy, rich finish. It’s got sweet corn, tender shredded chicken, creamy white beans, and just the right hint of spice. We top ours with fresh lime juice and a sprinkle of cheese or cilantro when we have it.

This chowder is 100% Celiac-safe and absolutely loaded with protein—over 40 grams per serving! We use:

  • Frozen sweet corn for sweetness and texture

  • Boneless skinless chicken breasts for lean, high-protein richness

  • Cannellini beans for creaminess and added fiber

  • Gluten-free chicken broth to keep it safe

  • Cream cheese for velvety richness

All the flavor without a gluten-filled thickener in sight.

How to Serve It

Add the chicken, GF chicken broth, cannelloni beans, minced onion, butter, and corn to the slow cooker.

Sprinkle with with garlic powder, chili powder, paprika, salt, and pepper. Cover and cook on low 4-6 hours.

Remove chicken and shred with two forks.

Remove chicken and shred with two forks. Use immersion blender and blend soup a small amount (not too much).

Add shredded chicken back to slow cooker. Add lime juice. Stir well and whisk until fully melted and smooth.

Serve and top with Cojita cheese, cilantro, sliced jalepenos, green onions, avocado, or tortilla chips.

2 tablespoons butter

1 diced medium onion

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon chili powder

1 teaspoon paprika

2 lbs. boneless skinless chicken breasts

32 oz. GF chicken broth

1 15 oz. can Cannelloni Beans

2 tablespoons lime juice

8 oz. Philadelphia Cream Cheese divided and softened
